Scientists from William Paterson University conducted a large-scale analysis of 41 varieties of fruits and vegetables, evaluating the content of vitamins, dietary fiber, and nutrients. The results were unexpected: the top ten were completely occupied by green vegetables — beans, spinach, and Brussels sprouts. Fruits began to appear in the ranking only from the 28th position, however, among them, lemon became the undisputed leader, refuting the centuries-old belief about the benefits of apples.
Why lemon specifically?
The key to the citrus's success is the high concentration of beneficial substances. Lemon is rich in vitamin C, flavonoids, and antioxidants, which are contained in it in significant quantities. Researchers emphasize that citric acid effectively strengthens the immune system. To avoid discomfort from excessive acidity, specialists advise adding lemon juice to salads, soups, or water. Thus, the popular habit of starting the day with a glass of water with lemon has received scientific confirmation of its benefits.
What about the apple?
The apple, which for centuries was considered the standard of healthy eating, unexpectedly yielded not only to lemon but even to pumpkin and carrots. However, scientists urge not to exclude apples from the diet, ironically noting that protein bars with lemon have not yet become part of our everyday life.

Experts advise diversifying the ways of consuming lemon: add a slice to tea, sprinkle fish dishes with juice, or freeze lemon juice in ice cube trays.
